Serves 4
Ingredients
- 4 chicken breasts, skinless
- 2 lemons, juiced and zested
- 2 cloves of garlic, chopped
- 2 shallots, chopped
- 3 sprigs of chopped rosemary
- 2 tbsp olive oil
- 1 tbsp maple syrup
Preparation method
- Slice ¾ of the way through the chicken breasts lengthways then place in a zip lock food bag along with
half the lemon zest and juice, the garlic, shallots and ¾ of the chopped rosemary. Add olive oil and
season with salt and pepper then rub all of the ingredients together in the bag. Chill in the fridge for at
least 1 hour.
- Next pre heat the bbq (or hob) to a medium heat and lay the cut chicken breasts so they are flat on the
bbq bars (or griddle) and cook for 3 minutes on each side.
- Meanwhile, mix together the maple syrup, the remaining rosemary and the extra lemon juice and zest
and brush over the chicken on both sides then cook for a further minute, remove and serve immediately.
