Lemon and Rosemary sticky maple chicken marinade

Serves 4

Ingredients

  • 4 chicken breasts, skinless
  • 2 lemons, juiced and zested
  • 2 cloves of garlic, chopped
  • 2 shallots, chopped
  • 3 sprigs of chopped rosemary
  • 2 tbsp olive oil
  • 1 tbsp maple syrup

Preparation method

  1. Slice ¾ of the way through the chicken breasts lengthways then place in a zip lock food bag along with half the lemon zest and juice, the garlic, shallots and ¾ of the chopped rosemary. Add olive oil and season with salt and pepper then rub all of the ingredients together in the bag. Chill in the fridge for at least 1 hour.
  2. Next pre heat the bbq (or hob) to a medium heat and lay the cut chicken breasts so they are flat on the bbq bars (or griddle) and cook for 3 minutes on each side.
  3. Meanwhile, mix together the maple syrup, the remaining rosemary and the extra lemon juice and zest and brush over the chicken on both sides then cook for a further minute, remove and serve immediately.
