Hot Chilli pork chops with ginger and coriander

Serves 4

Ingredients

  • 200ml ketchup manis
  • 150ml water
  • 2 cloves garlic, minced
  • 1 thumb size piece of ginger, diced
  • 1 lime, juiced and zested
  • 2 large red chillies, sliced
  • 2 spring onions, sliced
  • 4 sprigs of fresh coriander, stalks chopped and leaves picked
  • 4 thick cut boned Pork chops

Preparation method

  1. Whisk together the ketchup manis, water, garlic, diced ginger, lime, 1 chopped chilli, 1 sliced spring onion, and coriander stalks. Put the pork chops in a bowl and pour over the marinade. Cover with cling film and marinade in the fridge for 2 hours.
  2. Shake off the excess marinade and cook on hot bbq bars or in a non stick frying pan for around 4 minutes on each side, turning occasionally. Brush with leftover marinade as you cook and serve topped with the rest of the sliced spring onions, chilli and coriander leaves.
